Most mushy cereals are great for braces wearers. Here is an old favorite of grandma’s. It’s a simple, tasty, and easy-to-make corn-meal mush. Quick-cooking cereals may be cooked over direct heat. If you buy an instant corn-meal cereal, you can follow the directions located on the package for the amount of water to add and the length of the cooking period. In most cases each manufacturer has worked these out very carefully for his own product. But if you have corn-meal but don’t have directions, here are the particulars for 4-6 servings.
-¾ cup corn meal
-1 teaspoon salt
-3 ½ cups boiling water
Sprinkle corn-meal gradually into boiling salted water, stirring constantly until mixture boils; reduce heat and cook for 5 minutes, stirring once or twice.
Place over boiling water and cook tightly covered for about ¾ hour or until all of the water has been absorbed.
ADDITIONAL RECIPE: FRIED MUSH
Pour cooked corn-meal into loaf pan which has been rinsed with cold water. Cool, cover and chill until thoroughly cold and firm. Unmold; cut into slices ½ inch thick.
Dip each slice in flour and sauté in small amount of butter or bacon fat on both sides until golden brown. Serve with syrup or honey.
Note: Leftover oatmeal or finely ground cooked wheat cereals may be packed in a loaf pan and used in place of corn-meal. Three cups of cooked cereal will make 4-6 portions.
